Purple Thai Quick Salad
A colorful salad with a fruitful zest!
- 1 cup Purple Thai Rice prepared as directed
- 4 Persian cucumbers, quartered lengthwise and sliced crosswise 1/4 inch thick
- 1 bunch scallions, thinly sliced
- 1 Diced Sun-dried Tomatoes
- 3 tablespoon Extra Virgin Olive Oil
- 2 teaspoon grated lemon zest
- 2 teaspoon fresh lemon juice
- 1 tablespoon Arawak Farm® Mango Pineapple Pepper Sauce
- Combine all and toss. Add more olive oil and pepper sauce to taste.
