Purple Thai Quick Salad

A colorful salad with a fruitful zest!

Ingredients

  • 1 cup Purple Thai Rice prepared as directed
  • 4 Persian cucumbers, quartered lengthwise and sliced crosswise 1/4 inch thick
  • 1 bunch scallions, thinly sliced
  • 1 Diced Sun-dried Tomatoes
  • 3 tablespoon Extra Virgin Olive Oil
  • 2 teaspoon grated lemon zest
  • 2 teaspoon fresh lemon juice
  • 1 tablespoon Arawak Farm® Mango Pineapple Pepper Sauce

Instructions

  • Combine all and toss. Add more olive oil and pepper sauce to taste.
